Phasants
The great green pheasant was a handsome bird. Females and their immature offspring sported lustrous bronze-green plumage. Emerald green feathers and long, trailing tail plumes adorned the male. The cocks were famous for their ferocious duels over potential mates: they rushed at each other fiercely, broadsiding their rivals in clouds of emerald green down, until one or the other retreated, exhausted and bedraggled. Great green pheasants, like the grass grouse, were considered tasty, but this larger bird had to be hung before eating, as it was tougher (in every way) than the passive grass grouse.
